Busy Day Tuna and Orange Dinner Salad
Ingredients
- 1 cup dry quinoa
- 1 1/2 cups orange juice
- 2 handfuls baby spinach
- 1 tin well drained tuna
- 1 cup chick peas
- 2 green onions, chopped
- 2 stalks celery, diced
- 1 orange, peeled and cut into cubes
- black pepper to taste (app 1/2 tsp)
- 2 tsp extra virgin olive oil
- 1 tsp rice wine vinegar
- 1/2 tsp soy sauce
- 1/4 tsp sesame oil
Directions
- Cook the quinoa in the orange juice according to pkg directions.
- Place the cooked quinoa in a large bowl and add the spinach leaves continuing to stir until they've wilted into the quinoa somewhat.
- Add the tuna, chick peas, onion, celery, and orange. Stir to combine.
- In a separate bowl, combine the olive oil, vinegar, soy sauce, and sesame oil and whisk until well combined. Pour over the quinoa salad, toss, and serve.
