Busy Day Tuna and Orange Dinner Salad

Ingredients
  • 1 cup dry quinoa
  • 1 1/2 cups orange juice
  • 2 handfuls baby spinach
  • 1 tin well drained tuna
  • 1 cup chick peas
  • 2 green onions, chopped
  • 2 stalks celery, diced
  • 1 orange, peeled and cut into cubes
  • black pepper to taste (app 1/2 tsp)
  • 2 tsp extra virgin olive oil
  • 1 tsp rice wine vinegar
  • 1/2 tsp soy sauce
  • 1/4 tsp sesame oil
Directions
  1. Cook the quinoa in the orange juice according to pkg directions.
  2. Place the cooked quinoa in a large bowl and add the spinach leaves continuing to stir until they've wilted into the quinoa somewhat. 
  3. Add the tuna, chick peas, onion, celery, and orange. Stir to combine. 
  4. In a separate bowl,  combine the olive oil, vinegar, soy sauce, and sesame oil and whisk until well combined. Pour over the quinoa salad, toss, and serve.
