Cornbread Muffins
Ingredients
- Vegetable oil spray for muffin tin
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 1 ½ teaspoons baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup buttermilk
- 1 large egg, lightly beaten
- 1/4 cup mashed ripe avocado
- 1/4 cup light Philadelphia Cream Cheese
- 1 Tbsp Salsa Verde
- 1 Tbsp finely diced jalapeno pepper
- 1/4 cup cilantro
Directions
- Sift together flour, cornmeal, sugar, baking powder, baking soda and salt.
- Combine buttermilk, egg, avocado, cream cheese, salsa, jalapeno
pepper, and cilantro. Stir buttermilk mixture into flour mixture until
combined.
- Spray a muffin tin (regular or mini) with cooking spray and spoon equal amounts of the batter into each cup.
- Bake in a pre-heated 375 degree oven for app 17 minutes.
