Grilled Chicken Clubhouse Crostini

Ingredients
  • 1 baguette cut into 1/4 inch rounds
  • softened butter
  • 1/4 tsp each salt and cracked black pepper
  • 1 grilled boneless, skinless chicken breast
  • 3 strips bacon
  • 3 small chopped tomatoes like Campari
  • 1/4 cup mayonnaise
  • salad greens
Directions
  1. Butter the baguette slices on one side, sprinkle with pepper, and place on a pre-heated 375 degree grill turning and moving every 30 seconds so they don't burn. Remove from the heat when golden and crispy.
  2. In the meantime, fry the bacon until crispy and crumble, cut or shred the chicken breast meat and put in a bowl. Add the bacon, tomatoes, mayonnaise, pepper, and mix well.
  3. Place salad greens onto each baguette and top with a dollop of the chicken salad.
  4. Serve with a cool glass of chardonnay and a sunset.
