Black Cherry Pancakes with Black Cherry Maple Syrup

Ingredients
  • 1 cup cherries, pitted, cut in half
  • 1/4 cup pure maple syrup
  • Your favourite pancake mix
Directions
  1. Slice cherries on both sides and then cut the pit out of the middle to make 1 cup.
  2. Add 1/2 cup pitted cherries to 1/4 cup pure maple syrup in a sauce pan over medium heat, and when it starts to simmer, turn the temperature to low and cook until thick and bubbly.
  3. Fold the remaining cherries into your favourite pancake mix, fry over medium heat until golden and cooked through, and serve with that amazing cherry syrup - for an extra treat, add a dollop of whipping cream.
