Creole Creamed Corn

Ingredients
  • 2 tablespoons butter 
  • 1 medium onion, diced 
  • 1/2 medium red pepper, diced 
  • 1 tbsp finely diced jalapeno pepper 
  • 2 cups corn (can use fresh tinned niblets) 
  •  3/4 cup whipping cream 
  • 1/2 teaspoon dried thyme 
  • 1/2 teaspoon hot sauce 
  • 1 green onion, diced 
  • 2 tablespoons chopped parsley 
  • 1 tablespoon chopped fresh basil 
  • Kosher salt to taste 
  • Ground black pepper to taste 
 Directions 
  1.  Melt butter in a large non-stick skillet over medium-high heat. 
  2. Add onion and sauté until translucent, about 5 minutes. 
  3.  Add bell pepper, jalapeno pepper, and sauté until beginning to soften, about 3 minutes. 
  4. Add corn; sauté 2 minutes. 
  5. Add cream, thyme, and 1/2 teaspoon hot pepper sauce. 
  6. Simmer until sauce thickens, about 5 minutes. 
  7. Mix in green onion, parsley, and basil. 
  8. Season to taste with coarse salt, and pepper to taste.
