Creole Creamed Corn
Ingredients
- 2 tablespoons butter
- 1 medium onion, diced
- 1/2 medium red pepper, diced
- 1 tbsp finely diced jalapeno pepper
- 2 cups corn (can use fresh tinned niblets)
- 3/4 cup whipping cream
- 1/2 teaspoon dried thyme
- 1/2 teaspoon hot sauce
- 1 green onion, diced
- 2 tablespoons chopped parsley
- 1 tablespoon chopped fresh basil
- Kosher salt to taste
- Ground black pepper to taste
Directions
- Melt butter in a large non-stick skillet over medium-high heat.
- Add onion and sauté until translucent, about 5 minutes.
- Add bell pepper, jalapeno pepper, and sauté until beginning to soften, about 3 minutes.
- Add corn; sauté 2 minutes.
- Add cream, thyme, and 1/2 teaspoon hot pepper sauce.
- Simmer until sauce thickens, about 5 minutes.
- Mix in green onion, parsley, and basil.
- Season to taste with coarse salt, and pepper to taste.
