Bacon and Egg Toast Cups
Ingredients
- 6 slices of bread, crusts removed
- softened butter for spreading
- 3 slices bacon, cooked and crumbled
- 6 eggs
- cracked black pepper
- 6 tbsp. grated sharp cheddar cheese
- finely chopped fresh chives (optional)
Directions
- Butter each slice of bread on one side and place butter side down in a 6 muffin tin or ramekin
- Sprinkle even amounts of the crumbled bacon into each of the six cups
- Crack an egg into each cup, sprinkle liberally with pepper and place 1 tbsp of grated cheese onto each
- Bake in a pre-heated 375 oven for 20-25 minutes until egg whites are set
- Remove from the ramekins and sprinkle with the chives
