Bacon and Egg Toast Cups

Ingredients
  • 6 slices of bread, crusts removed
  • softened butter for spreading
  • 3 slices bacon, cooked and crumbled
  • 6 eggs
  • cracked black pepper
  • 6 tbsp. grated sharp cheddar cheese
  • finely chopped fresh chives (optional)
Directions
  1.  Butter each slice of bread on one side and place butter side down in a 6 muffin tin or ramekin
  2. Sprinkle even amounts of the crumbled bacon into each of the six cups
  3. Crack an egg into each cup, sprinkle liberally with pepper and place 1 tbsp of grated cheese onto each
  4. Bake in a pre-heated 375 oven for 20-25 minutes until egg whites are set
  5. Remove from the ramekins and sprinkle with the chives
