Yorkshire Puddings

Ingredients
  • 2 eggs
  • 1/2 tsp salt
  • 1 cup all purpose flour
  • 3/4 cup milk
  • 1/3 cup water at room temperature
  • 12 tsp vegetable, canola, or corn oil
Directions
  1.  Whisk 2 eggs in a medium bowl and then, stirring with a wooden spoon, gradually add the salt, flour, and milk. 
  2. Once those are well combined, add the water and whisk until smooth. 
  3. Pour into a measuring cup or pitcher, and don't be afraid of the odd lump. Cover and let sit at room temperature for at least an hour before baking. 
  4. When ready to bake, preheat the oven to 450 f. 
  5. Using a 12 cup muffin pan, place a teaspoon of oil into each cup and place into the 450 oven for 3 minutes.
  6. Carefully remove the pan from the oven and pour 1/4 cup portions of the batter into each cup. Bake for app 15 minutes until the puddings are puffed and lightly browned.
