2 anjou pears
1 tablespoon butter, melted
2 tablespoons sugar
Salad dressing
1 tablespoons extra virgin olive oil
1 teaspoons balsamic vinegar
1/2 teaspoon salt
freshly ground black pepper
Salad
4 cups baby arugula
1/2 cup crumbled cheese like Boursin, feta, or blue cheese
1/2 toasted cup chopped walnuts or pecans
Directions:
- Preheat oven to 500
- Cut each pear lengthwise, remove the core, then set cut side down on a board and slice thinly,
- Toss pear with butter and sugar.
- Place on a baking sheet prepared with parchment paper and roast for 10 min. Flip and roast 5 more minutes. Let pears cool.
- Toast the nuts in a small dry skillet until browned, 3 minutes and set aside.
- Whisk the olive oil, vinegar, salt and pepper together.
- Combine arugula and pears in large serving bowl, and gently toss with the dressing.
- Add the cheese and nuts and sprinkle on top.
