Spicy Creole, Low Fat Sweet Potato Fries with Curried Apple Dip

Ingredients

  • 1 large sweet potato (yam)
  • 1 Tbsp extra virgin olive oil
  • 1 tsp Emeril's Creole Spice blend
Directions
  1. Peel sweet potato and cut into french fry sized strips
  2. Put in a large bowl and toss with the extra virgin olive oil
  3. Toss in the Creole spice making sure the fries are well coated.
  4. Put onto a parchment lined baking sheet and bake in a 400 oven for 45 minutes turning once.
Curried Apple Dip

Ingredients
  • 1/2 cup no fat sour cream
  • 1 heaping Tbsp low fat mayonaisse
  • 2 heaping tsps unsweetened apple sauce
  • 1 tsp curry powder
Mix everything together and serve with sweet potato fries
    Creole Seasoning Ingredients:
    • 2-1/2 Tbsp paprika
    • 2 Tbsp salt
    • 2 Tbsp garlic powder
    • 1 Tbsp freshly ground black pepper
    • 1 Tbsp onion powder
    • 1 Tbsp cayenne
    • 1 Tbsp dried oregano
    • 1 Tbsp dried thyme
    Directions:

    Combine paprika, salt, garlic powder, black pepper, onion powder, cayenne, oregano, and thyme thoroughly in a bowl.

    Store in an airtight container away from light. Use within three months.
