- 1 large sweet potato (yam)
- 1 Tbsp extra virgin olive oil
- 1 tsp Emeril's Creole Spice blend
- Peel sweet potato and cut into french fry sized strips
- Put in a large bowl and toss with the extra virgin olive oil
- Toss in the Creole spice making sure the fries are well coated.
- Put onto a parchment lined baking sheet and bake in a 400 oven for 45 minutes turning once.
Ingredients
- 1/2 cup no fat sour cream
- 1 heaping Tbsp low fat mayonaisse
- 2 heaping tsps unsweetened apple sauce
- 1 tsp curry powder
- 2-1/2 Tbsp paprika
- 2 Tbsp salt
- 2 Tbsp garlic powder
- 1 Tbsp freshly ground black pepper
- 1 Tbsp onion powder
- 1 Tbsp cayenne
- 1 Tbsp dried oregano
- 1 Tbsp dried thyme
Combine paprika, salt, garlic powder, black pepper, onion powder, cayenne, oregano, and thyme thoroughly in a bowl.
Store in an airtight container away from light. Use within three months.
