Seafood Alfredo

Ingredients
  • 1 lb peeled uncooked prawns
  • 12-16 Bay scallops
  • 2 Tbsp butter
  • 1 Tbsp extra virgin olive oil
  • 2 cloves minced garlic
  • 1 Tbsp flour
  • 1 cup chicken broth
  • 1 cup half and half cream
  • 1 Tbsp sherry (optional)
  • 1/2 cup Chive and Onion Philadelphia Cream Cheese
Directions
  1. In a large non-stick pan, over medium/high heat, melt 1 tbsp of butter and 1 tbsp olive oil.
    Add scallops to the hot pan and sear off both sides. Set aside.
  2. Add shrimp to the pan and sautee until pink and cooked through (about 3-5 minutes) over medium heat. Set aside with the scallops.
  3. Add the second Tbsp of butter to the pan and gently saute the minced garlic over medium high heat just untiol fragrant (about 30 seconds)
  4. Add the flour to make a paste. Continue to gently saute about another 3- seconds to a minute. 
  5. Whisk in the chicken broth, cream, and sherry. Return heat to high and continue to whisk until sauce begins to thicken. 
  6. Add the cream cheese and continue to whisk adjusting heat as necessary. 
  7. Add the seafood back to the sauce and simmer at a low gentle boil for 7 minutes. 
  8. Toss with pasta and sprinkle with pamesan arregianno and black pepper.
