Seafood Alfredo
Ingredients
- 1 lb peeled uncooked prawns
- 12-16 Bay scallops
- 2 Tbsp butter
- 1 Tbsp extra virgin olive oil
- 2 cloves minced garlic
- 1 Tbsp flour
- 1 cup chicken broth
- 1 cup half and half cream
- 1 Tbsp sherry (optional)
- 1/2 cup Chive and Onion Philadelphia Cream Cheese
Directions
- In a large non-stick pan, over medium/high heat, melt 1 tbsp of butter and 1 tbsp olive oil.
Add scallops to the hot pan and sear off both sides. Set aside.
- Add shrimp to the pan and sautee until pink and cooked through (about 3-5 minutes) over medium heat. Set aside with the scallops.
- Add the second Tbsp of butter to the pan and gently saute the minced garlic over medium high heat just untiol fragrant (about 30 seconds)
- Add the flour to make a paste. Continue to gently saute about another 3- seconds to a minute.
- Whisk in the chicken broth, cream, and sherry. Return heat to high and continue to whisk until sauce begins to thicken.
- Add the cream cheese and continue to whisk adjusting heat as necessary.
- Add the seafood back to the sauce and simmer at a low gentle boil for 7 minutes.
- Toss with pasta and sprinkle with pamesan arregianno and black pepper.
