Brine Recipe for Chicken

Ingredients
  • 1/4 cup sea salt
  • 1/4 cup sugar
  • 4 crushed cloves garlic
  • aromatics like a bundle of fresh herbs (parsley, sage, rosemary and thyme)
  • 1 tbsp crushed black pepper corns
  • 6 cups water
Directions for brining
  1. Mix the salt, sugar, and water together in a sauce pan and bring to the boil stirring well until the salt and sugar have dissolved. Add the garlic, and aromatics and cool to room temp. 
  2. Pour over the chicken pieces. Refrigerate in an air tight container for 2-4 hours or up to overnight if brining a whole chicken.
  3. Rinse the chicken well in cold water and pat dry after brining.
