Ingredients
- 1/4 cup sea salt
- 1/4 cup sugar
- 4 crushed cloves garlic
- aromatics like a bundle of fresh herbs (parsley, sage, rosemary and thyme)
- 1 tbsp crushed black pepper corns
- 6 cups water
Directions for brining
- Mix the salt, sugar, and water together in a sauce pan and
bring to the boil stirring well until the salt and sugar have dissolved.
Add the garlic, and aromatics and cool to room temp.
- Pour over the chicken pieces. Refrigerate in an air tight container for 2-4 hours or up to overnight if brining a whole chicken.
- Rinse the chicken well in cold water and pat dry after brining.
