Chopped Salad

Prep time: 10 minutes
Serves: 4

Ingredients
  • 4 cups salad greens of your choice
  • 4-5 fresh basil leaves
  • 1/2 cucumber, peeled and chopped
  • 4 green onions, chopped
  • 2 stalks celery, chopped
  • 1/2 green pepper, chopped
  • 2 medium tomatoes, chopped with seeds and juice
  • 1 ripe avocado, cubed
  • 1/4 tsp each sea salt and pepper
  • 1 tbsp extra virgin olive oil
  • 1/2 tbsp fresh lemon juice
Directions
  1. Place the salad greens and basil onto a large cutting board and and chop them once horizontally and once on the diagnol
  2. Place the chopped cucumber, celery, green pepper, and green onions over top of the greens and continue to chop, again once horizontally and once on the diagnol
  3. Place the chopped salad into a large bowl, add the tomatoes, avocado, salt, pepper, olive oil, and lemon juice and toss
