Flatbread with Arugula, Apples, and Cheddar
Ingredients
- 1, 5x14 inch pre-made flatbread (any brand)
- 1 cup grated aged white cheddar
- 1/2 cup diced cooked pancetta, or 10 thin slices pancetta cooked until crispy
- 1/2 of a large apple, washed, and very thinly sliced (no need to peel)
- 1 handful baby arugula lettuce
- drizzle of extra virgin olive oil/ fresh cracked black pepper
Directions
- Preheat the oven to 400. Arrange the pancetta evenly over the surface of the flatbread. Top with the cheddar, followed by the sliced apple. Sprinkle with the cracked black pepper (about 1/4 tsp or to your taste
- Place the flatbread directly onto your oven rack (no baking sheet required) and bake for 7-10 minutes until the cheese is bubbly and the flatbread is beginning to crsip slightly.
- Remove from oven and let cool slightly. Sprinkle the arugula over all and then drizzle with the olive oil (no more than a tsp)
