Jeanine Friesen's Fiesta Chicken
Ingredients
- 4 boneless skinless chicken breasts
- 1/2 cup Philadelphia Cream Cheese (light or regular)
- 2 Tbsp taco seasoning mix
- juice of 1/2 lime
- 1/2 cup finely chopped red pepper
- 1 tsp finely diced jalapeno pepper
- 2 cups shredded extra old cheddar cheese
- 1/2 cup chopped cilantro
- 1/2 cup black beans, drained and rinsed
- 1 cup real mayonnaise
- 1 Tbsp taco seasoning mix
- 2 cups cornflake crumbs (use gluten free ie.cornflakes without malt if you are gluten intolerant)
Directions
- Lay the chicken breasts on a flat surface and, using a sharp knife, make about 4 or 5 vertical slits going lengthwise down the breasts. Open slightly like a fan, cover with plastic wrap, and pound flat.
- Mix the cream cheese, 2 Tbsp taco seasoning, lime, red pepper, jalapeno, cheddar, black beans and cilantro.
- Place a generous 1/4 cup of the cheese stuffing mixture onto the middle each flattened breast, spread evenly, roll, and affix with toothpicks (as per the recipe video)
- Mix the additional tbsp of taco mix with the mayonnaise. Dip each chicken breast into the mayo making sure each breast is well coated and then dredge in the cornflake crumbs.
- Place onto a parchment lined baking sheet (very important so the chicken doesn't stick) and bake in a pre-heated 350 degree oven for 1 hour.
- Let rest five minutes before serving.
