- 1 cup all purpose flour
- 1/3 cup brown sugar
- 1/2 cup ground roasted, salted almonds
- 1/4 cup cold butter, cubed
- 1 cup softened light cream cheese
- 2 tbsp milk
- 1/4 cup honey
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp vanilla extract
- 1 egg
- 1 cup diced fresh fruit or berries of your choice
Directions
- In a small bowl combine the flour, brown sugar, and ground almonds (grind in your food processor).
- Cut in butter until crumbly.
- Press into an 8 inch square baking pan that has been treated with cooking spray.
- Bake at 350 for 10-12 minutes until lightly browned.
- For the filling, in a large bowl beat the cream cheese, milk, honey, vanilla, and spices until smooth. Beat in the egg and fold in the fruit.
- Pour over the crust and bake in a 350 oven for 20- 25 minutes until set.
- Cool completely on a wire rack.
- Garnish with additional fruit or whipping cream.
