Fruity Cheesecake Bars

Ingredients
  • 1 cup all purpose flour
  • 1/3 cup brown sugar
  • 1/2 cup ground roasted, salted almonds
  • 1/4 cup cold butter, cubed
  • 1 cup softened light cream cheese
  • 2 tbsp milk
  • 1/4 cup honey
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 cup diced fresh fruit or berries of your choice

Directions
  1. In a small bowl combine the flour, brown sugar, and ground almonds (grind in your food processor).
  2. Cut in butter until crumbly.
  3. Press into an 8 inch square baking pan that has been treated with cooking spray.
  4. Bake at 350 for 10-12 minutes until lightly browned.
  5. For the filling, in a large bowl beat the cream cheese, milk, honey, vanilla, and spices until smooth. Beat in the egg and fold in the fruit.
  6. Pour over the crust and bake in a 350 oven for 20- 25 minutes until set. 
  7. Cool completely on a wire rack.
  8. Garnish with additional fruit or whipping cream.
