All Aboard Cookies
Ingredients
- 1/2 cup softened unsalted butter
- 3/4 cup white sugar
- 1 egg
- 1/2 tsp coconut extract
- 1 1/4 cups all purpose power
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips
- 1 cup toasted coconut
- 1/2 cup candies pineapple and papaya
- 3/4 cup chopped toasted pecans
- 3/4 cup toasted sliced almonds
Directions
- Cream together the butter and sugar until fluffy, stir in egg and coconut extract.
- Combine dry ingredients and gradually add to the wet ingredients.
- Fold in fruit, nuts, and chocolate chips.
- Stir well, divide in half, and place each half onto a 14 inch sheet of plastic wrap. Roll into a tube, tighten the ends, and refrigerate for 30 minutes.
- Slice into 1/2 inch thick disks, place on parchment lined cookie sheets, and flatten slightly with a fork. Bake in a 375 degree oven for 10-12 minutes.
