All Aboard Cookies

Ingredients
  • 1/2 cup softened unsalted butter
  • 3/4 cup white sugar
  • 1 egg
  • 1/2 tsp coconut extract
  • 1 1/4 cups all purpose power
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • 1 cup toasted coconut
  • 1/2 cup candies pineapple and papaya
  • 3/4 cup chopped toasted pecans
  • 3/4 cup toasted sliced almonds
Directions
  1. Cream together the butter and sugar until fluffy, stir in egg and coconut extract.
  2. Combine dry ingredients and gradually add to the wet ingredients. 
  3. Fold in fruit, nuts, and chocolate chips.
  4. Stir well, divide in half, and place each half onto a 14 inch sheet of plastic wrap. Roll into a tube, tighten the ends, and refrigerate for 30 minutes.
  5. Slice into 1/2 inch thick disks, place on parchment lined cookie sheets, and flatten slightly with a fork. Bake in a 375 degree oven for 10-12 minutes.
