Ingredients
- 2 large firm white fish filets like halibut, haddock, or cod
- 1/4 cup flour
- 2 tsp Old Bay seasoning
- 1 beaten egg
- 1 cup Panko breadcrumbs
- 2 tsps lemon salt or my holiday salt blend
- 1/4 cup vegetable oil
- 4 high quality, soft, fresh white bakery hamburger buns, or a favourite homemade hamburger buns

- Set up an assembly line with the Old Bay seasoning mixed into the flour, the beaten egg, and the Panko combined with the lemon salt.
- Dredge the fish in the flour, dip into the egg and cover with the bread crumbs. Cover and let set in the refrigerator for at least 30 minutes.
- When ready to cook, heat the oil in large deep skillet over medium high heat and fry in the hot oil for app 5 minutes, turning continuously for even cooking.
For the Tartar Sauce
- 1 cup mayonnaise
- 1/4 cup finely chopped dill pickle
- 2 teaspoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 clove minced garlic
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon hot pepper sauce
