Caribbean Jerk Style Chicken
Ingredients
- 4 bone in skinless chicken breasts
- 1/2 onion, chopped
- 1 1/2 teaspoons dried thyme
- 1 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
- 1 teaspoon fresh ground black pepper
- 1 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 2 small jalapenos or 1 tbsp hot pickled banana peppers
- 1 tablespoon extra virgin olive oil
- Generous splash spiced rum
Directions
- Put all ingredients into food processor. Mix on high for 15 pulses.
- Pour the marinade into a large ziplock bag. Add the chicken breasts, mix well, and marinate overnight or for at least two hours.
- After the chicken breasts have marinated, place on a parchment lined sheet and bake in a 350 for one hour.
