Caribbean Jerk Style Chicken

Ingredients  
  • 4 bone in skinless chicken breasts
  • 1/2 onion, chopped
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2 small jalapenos or 1 tbsp hot pickled banana peppers
  • 1 tablespoon extra virgin olive oil
  • Generous splash spiced rum
Directions
  1. Put all ingredients into food processor. Mix on high for 15 pulses.
  2. Pour the marinade into a large ziplock bag. Add the chicken breasts, mix well, and marinate overnight or for at least two hours.
  3. After the chicken breasts have marinated, place on a parchment lined sheet and bake in a 350 for one hour.
