Zesty, Cheesy, Tuna Melts

These zesty little treats provide an updated, lower fat twist on an old classic. Perfect for lunch or a quick weeknight dinner, you will enjoy the raves you get from all who try these!  

Ingredients
  • 1 can sodium reduced tuna, drained 
  • 1 chopped green onion 
  • 1 stalk celery, diced 
  • 1/4 cup finely diced hot pickled banana peppers 
  • 1/4 tsp black pepper 
  • 1/4 cup low fat mayonnaise 
  • 1 cup drained pineapple tidbits 
  • 1 cup finely shredded extra old low fat cheddar 
  • 4 slices high quality multi grain bread
Directions
  1. Mix the first seven ingredients together in a large bowl 
  2. Lightly toast the bread 
  3. Spread tuna mixture in equal amounts over all four slices and top with equal amounts of the cheese. 
  4. Place on a baking sheet and broil app 2-3 minutes until the cheese is golden and bubbly
