Lemon Ginger Rice

Serves: 2 hungry people or 4 lighter eaters/ Prep time: 5 min/ Cook time: 20 min

Ingredients
  • 1 cup long grain white rice 
  • 2 cups low sodium chicken broth
  • zest from one whole lemon
  • 1 tsp fresh grated ginger 
Directions
  1. Bring all ingredients to a boil over high heat. 
  2. Stir, cover, turn to low and simmer 15-20 minutes until all liquid is absorbed and rice is al dente.
