Green Chili Stew

Ingredients
  • 2 lb boneless pork loin chops cut into 1 1/2 inch cubes
  • 1 medium onion chopped
  • 1 jalapeno chili, seeded, chopped
  • 1 small can chopped green chiles
  • 1 small can diced tomatoes
  • 1 can pinto beans or chick peas, rinsed
  • 1 cup frozen corn
  • 3 cloves garlic, finely chopped
  • 2 teaspoons dried oregano leaves
  • 2 teaspoons ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup salsa verde
  • 1/2 cup chicken stock
Garnishes
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 cup shredded cheddar cheese
  • cooked white rice
Directions
  1. Spray slow cooker with cooking spray. 
  2. Place all ingredients except garnish into the slow cooker, stir well
  3. Cover, cook on low heat setting 8-9 hours
  4. Ladle stew into bowls. Garnish with sour cream, green onions, rice, and cheese
