Baked Sausage and Pepper Hero Sandwiches

Ingredients
  • 2 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cups sliced white onions
  • 2 teaspoons Creole seasoning
  • 1 teaspoon dried Italian herbs
  • 1/2 pound mild Italian sausage, removed from casings and crumbled
  • 1/2 pound hot Italian sausage, removed from casings and crumbled
  • 1/2 cup mayonaisse
  • 1 tablespoon Louisiana hot sauce
  • 4 foot long hoagie buns or six panini buns
  • 4 slices provolone cheese
Directions
  1. In a large saute pan, heat the olive oil over medium high heat. When the oil is hot, add the bell peppers, onions, creole spice, and Italian herbs. Cook until the vegetables have softened, 4 to 5 minutes. Transfer the peppers and onions to a paper towel lined plate.
  2. Add the crumbled sausage to the hot pan and cook until the meat is cooked through and lightly browned, about 5 minutes. Set aside.
  3. In a small bowl, combine the mayonnaise and the hot sauce.
  4. Spread both sides of each bun with the spicy mayonnaise. 
  5. Cover a 9x13 cake pan with tinfoil and place the bottom halves of the buns into the pan. Divide the sausage among the bottom pieces of bread then top evenly with the peppers and onions.
  6. Arrange the cheese slices over the filled bottom halves. Cover with top of buns.
  7. Cover the cake pan with tinfoil and bake in a 350 oven for 30 minutes.
